The Shibata 210mm Gyuto knife is the Japanese version of the chef’s knife and is a must for any chef’s knife collection. The Shibata Kotetsu gyutos have a reversed tip which is good for scoring fish, chicken and vegetables by dragging the point along the chopping board. This is a good size and would be a good knife size to start with if you have slightly smaller hands. The belly of the blade is low and this would not be a suitable knife for rocking backwards and forwards. Overall very sharp very light and very strong.
