The Shibata 270mm Sujihiki knife is big and has a thick blade which works well for the knife. It’s very impressive and has a good size handle, Sujihiki knives are the equivalent of the western carving knife which most Japanese chefs would use as their main sushi knife. It is the third in the line of knives needed for any chef’s case after the paring and cooks knife.
