This wonderful series of 33 layered Damascus VG10 steel from Sakai Takayuki has superior edge retention, sharpness and is stain resistant. The Sujihiki knife is hand hammered for extra strength and each knife is hand sharpened and has a mahogany handle.

The Sujihiki knife is long and narrow and has a thin blade it is used for slicing cooked and raw meats and removing fat and sinew.
